Officialy its a stew with potato, onions and apples. all mashed together it gives a uniform taste. The oven version doesn't mash things together, you can have a sweet bite, salty bite, potato bite this makes that i really like this dish. Next to all that, its also realy easy to make.

Ingredients
1400 grams waxy potatoes
800 grams hard sour apple (around 4 appels, I use granny smith)
6 cloves of garlic
550 grams red onion
4 tbsp thyme
6 tbsp oil
400 grams of smoked bacon strips
peper salt to taste
Preparation
I like to have everything in small bits, so you can have different things on one fork.
Wash the potatoes, cut them in cubes, rince them to get rid of extra starch, dry them a bit (not towel dry, don't let them swim in water on over plate). Cut apple in 4 pieces and then in sliced, onions in half and then slices, separate them.
Mix the potatoes, apple and onion together. Put them on a baking tray (lined with baking paper), add thinly sliced garlic, thyme, oil salt and pepper mix everything together.
Place the tray in oven at 220°C for 25-30 minutes. Mix everything in the middle of baking time.
Last 10 minutes head up a pan on high heat with a thick bottom. When it's warm add the bacon strips and baked until crispy, add bacon to baking tray when it comes out of oven.
