Palak Paneer

For a indian dish this one is really fast to prepair. With a lot of spinach.

Quantity

3-4 servings

Ingredients

300 grams spinach

ice cubes

5 tbsp ghee

1 tsp cumin seeds

4 chili pepper (could also be dried)

1 tbsp choped garlic (4 cloves)

1/2 cup red onion

1/2 tsp salt

1/4 tsp tumeric

1 tsp coriander

65 grams tomato

1/2 tsp garam masala

300 grams paneer

Preparation

Wash the spinach. Boil a pan with salt water. When the water boils add the spinach, boil it for 1 minute and transfer it to a bath with cold water and ice cubes to cool it down. When cooled down squeeze the water out. Blend the spinach until a smooth paste, with a little bit of water (2 tbsp), if necessary.

Heat up 5 tbsp of ghee. When its warm add cumin seeds and chopped chili peppers. After a minute add the garlic, bake until it is golden brown. Turn to a low flame and add the finely chopped red onion and 1/2 tsp salt. When onion looks light golden or glaze add turmeric, coriander, and chopped tomato. Mix everything on a medium flame, until it lost most of it liquid. Add the garam masala and bake 2-3 minutes.

Add the spinach puree to the masala-mix and add around 250 ml water. Cut the paneer in cubes of 1 cm. In a separate pan heat up 2 tbsp of ghee, coat the paneer by baking them on every side. Add the paneer to the spinach and cook for 3 minutes. Serve with bread.

Also nice on toasted bread for small snack.
