Quinoa
200 grams red quinoa
400 ml water
Beans
1/2 tsp bell pepper powder
1/4 tsp garlic powder
1/4 tsp cumin powder
1/8 tsp salt
1/8 tsp black pepper
1/4 tsp chilli flakes
200 (130 drained) grams back beans (not drained)
Salad
140 g mais
1 bell pepper
150 grams mandarin
3/4 avocado
80 gram appretiva fetta
6 leaves little gem (optional)
Dressing
70 gram mandarin
1/4 avocado
1 tbsp parsley
4 tbsp oil
2 tbsp lemon juice
Preparation
Wash and cook the quinoa for 10 minutes on a low flame, leave it rest for 10 minutes with the lid on.
Put the black beans in a pan and add the spices: 1/2 tsp bell pepper powder, 1/4 tsp garlic powder, 1/4 tsp cumin powder, 1/8 tsp
salt, 1/8 tsp black pepper, and 1/4 tsp chilli flakes. Bake it al together on a low flame until it's not liquid anymore. Put it aside and let it cool down.
Drain and wash the mais, cut the bell pepper, peel and cut the manderin in half, cut the avocado in cubes, and cut the little gem in smaller peases. mix cooled quinoa, black bean mixture, mais, bell pepper, manderin, avocado, fetta, and little gem.
Put 70 gram mandarin, 1/4 avocado, 1 tbsp parsley, 4 tbsp oil, 2 tbsp lemon juice in a mixer. Mix until a smooth paste. Mix it in the salad before serving or on the side.
