Avocado toast

Creamy egg-avocado toast. For small lunch or late breakfast.

Quantity

2 servings, 4 toasts


Ingredients

1 avocado (100 grams excl. pit & skin)

1/2 tsp coarse cosher salt

10 grams unsalted butter

2 eggs

4 slices of bread

1 tbsp olive oil

 

Preparation

Mash the pulp of the avocado together with 1/4 tsp of coarse cosher salt. Whisk the eggs together with 2 tbsp of water. Sprinkel the olive oil over slices of bread and toast them.

Melt the butter in a pan on low flame, when melted add the eggs slowley move suspension that it doesn't form a pancake. when it is almost ready, getting dry, add the avocado pulp. Mix all of this slowley, still low flame, until everything is combined.

Place mixture on toast sprinkel little bit extra salt on top.
