Quiche muffin with bell pepper & feta

I really like quiche muffins for birthday party's. I realized this one is also really good for lunch.

Quantity

10 muffins

Ingredients

10 sheets puff pastry (frozen)

200 grams bell pepper (1 bell pepper)

125 grams creme fraiche

1 spring onion

125 grams feta

3 eggs

1/8 tsp salt

1/4 tsp paprika powder

1/4 tsp chili powder

bit of butter

Preparation

Heat up oven at 200°C. Take the puff pastry out of freezer and let it come to room temperature.

Cut the bell peper in smal pieces. ( I used half a red and half a yellow bell peper). In a bowl mix the eggs with the creme fraiche. When it is mixed add the paprika powder, chili powder, salt and cut spring onions.

Coad the muffin tin with a bit of butter, place the puff pastry inside. You can either let leftovers stand up or put them down, try not to touch puff pastry next to it. Fill the puff pastry with a bit of bell pepper, add bit crumbled feta, next layer bell pepper, crumbled feta, continue until puff pastry is filled. Fill puff pastry with the egg - creme fraiche mix.

Place muffin tin in oven for 35 minutes. Let them cool down, take them out of tin.
