Ingredients
850 grams mashed potatoes (with a little bit less butter)
500 grams leek
1 1/2 red bell pepper
50 grams of butter + a little bit
100 grams grated young cheese
1 smoked sausage (225 grams)
Dutch: Rookworst. They also have vegetarian ones.
extra: apple sauce/apple compote

Large pan (wok)
Baking dish
Oven at 225°C
Preparation
Make the mashed potatoes as shown in the recipe linked in the ingredient list.
Cut a part of the top of the leek (the dark green part). Cut the leek lengthwise then in half circles of 0.5 cm wide. Wash them good with water, until you sure there is no sand left between the leek parts.
Wash the bell pepper and cut it in little cubes.
Warm the butter in a large pan and add the leek parts, when they shrunk add the bell pepper. When everything is heated for 10 minutes turn the head off. add the leek/bell pepper mixture to the mashed potatoes, part by part.
Slice half of the smoked sausage in small slices. the other half in cubes. Add the cubes to the mashed potatoes, and mix well.
Grease the baking dish with butter. add the mashed potatoes mixture in the baking dish. Make everything even and add the sliced smoked sausage on top. Finish with the grated cheese.
Put the baking dish in the oven for 25 minutes on 225°C.
You could serve it with apple sauce or apple compote.
