Spring onion soup

I love spring onions, but I always end up with a lot of leftover. That's why there is this soup, to use all you're spring onions so you don't have to throw them away.

Quantity

2 servings (200 grams soup p.p.)


Ingredients

5 grams garlic

50 grams spring onion (3 spring onions)

20 grams butter

20 grams flour

500 ml boulion

Serve with

parsley

optional: crispy soup balls

Materials

Preparation

Chop garlic and spring onion in slices and rings, keep some spring onion apart for garnishing. Heat up butter in a big pot and fry the onion and garlic. Turn off the heat and add flour bit by bit, make sure you don't get lumps. Cook it for 5 minutes and add bit of bouillon until everything is dissolved, then add the rest of the bouillon. Let everything cook for 15 minutes. Blend everything with stick blender. Add some pepper to taste, garnish with parsley, spring onion, crispy soup balls.
